Tomato, Olive & Burrata Pasta Sauce

While this sauce is simple, it is spectacular and truly elevates your fresh pasta to crave-worthy meal.  Pair this dish with a deep rich Primativo from Puglia.  Serves 4-6.   Enjoy!

INGREDIENTS

  • ½ cup pitted green olives

  • ½ cup pitted black olives

  • ¼ cup capers

  • 4 tablespoons extra virgin olive oil (EVOO)

  • 2 garlic cloves, finely chopped

  • 4 ripe tomatoes, diced

  • 1 chili pepper, seeded and finely chopped

  • 1 sprig fresh thyme, chopped

  • 6 ounces burrata cheese, drained

PREPARATION

  1. Chop olives and combine with capers. 

  2. Heat a large heavy bottomed sauté pan over medium high heat.

  3. Add EVOO, garlic, olives and capers.

  4. Add tomatoes and chili pepper, then bring sauce to a boil.

  5. Season generously with salt and pepper, add thyme.

  6. Add drained fresh pasta to sauce and toss.

  7. Tear fresh burrata over pasta.

  8. Serve immediately.
