Fruity Protein Bites

These delicious protein bites are an excellent, healthy, nutritious and delicious snack or quick breakfast. They are soft, yet filling and keep you going. Be creative to make substitutions if you desire, and make large batches so you can freeze them!  Makes 9 bites.  Enjoy!

INGREDIENTS

  • 2 organic rolled oats

  • 1 large ripe banana, mashed

  • ½ cup organic, unsweetened apple sauce

  • 1 tablespoon chia seeds

  • 2 tablespoons ground flaxseed

  • ¼ cup pepitos (fancy word for raw pumpkin seeds)

  • 1 teaspoon ground cinnamon

  • 1/8 teaspoon kosher or sea salt

  • ¼ cup fresh parsley, chopped

  • 9 heaping teaspoons organic, low sugar jam (or make your own, it’s easy!)

  • ¼ cup smooth, nut butter of choice

PREPARATION

  1.  Preheat oven to 350°.

  2. LIne baking sheet with parchment paper.

  3. Add oats to a food processor, and pulse until coarsely chopped. Don’t over process!

  4. Add pepitos and pulse 2- 3 times quickly.

  5. Transfer mixture to large bowl.

  6. Add bananas, apple sauce, chia seeds, flax, cinnamon, and salt, then stir to combine. Mixture should be dense.

  7. Using a large spoon, scoop out 9 even mounds onto baking sheet.

  8. Create a well in the center of each mound using thumb.

  9. Fill each well with 1 teaspoon of jam.

  10. Bake bites 11-12 minutes, until just firm on edges, yet still soft in the middle. Transfer to cooling rack.

  11. Heat nut butter in small microwaveable bowl until just warm and thinner consistency, about 45 seconds.

  12. Using a spoon drizzle nut butter on bites.

  13. Enjoy immediately, refrigerate in air tight container for up to 4 days, or freeze.
